My cooking success has been historically mixed. Some recipes work out really well, especially if I've made the dish many times, like family favorites. However, trying out a new recipe is hit and miss for me, or at least it was until I discovered the Cook's Illustrated cookbooks from America's Test Kitchen. The New Best Recipe was the first Cook's cookbook I found at HPB and it helped me master many simple recipes. The beauty of the Cook's cookbooks is how the authors explain the science behind the recipes. This helps amateurs like myself to avoid substitutions which won't work and explains why not to deviate from the instructions. My food is edible now! Thank you, Cook's!
